The Story
Chef and co-owner Jourdan Higgs never went to culinary school — he taught himself from YouTube, drawing on Sicilian family heritage and a deep love of Southern cooking, and first fed classmates at Northern Illinois University. The restaurant idea took shape during the pandemic: a tiny forty-seat room opened in 2021, sold out night after night, and within a year moved into a larger West Town home. Today Provaré appears in the Michelin Guide and has spun off a second location in Houston.
What to Order
Start with the fried lobster tails, salmon egg rolls or the crowd-favorite crabby fries loaded with seasoned crab.
