Provaré: Creole Heat Meets Italian Soul in West Town

What happens when cognac-flamed shrimp lands on housemade pasta and a lobster tail gets the fry treatment usually reserved for Southern Sunday dinner? Provaré happens. This West Town spot pairs Italian technique with Creole spice so confidently that the mash-up feels inevitable rather than experimental.

The Story

Chef and co-owner Jourdan Higgs never went to culinary school — he taught himself from YouTube, drawing on Sicilian family heritage and a deep love of Southern cooking, and first fed classmates at Northern Illinois University. The restaurant idea took shape during the pandemic: a tiny forty-seat room opened in 2021, sold out night after night, and within a year moved into a larger West Town home. Today Provaré appears in the Michelin Guide and has spun off a second location in Houston.

What to Order

Start with the fried lobster tails, salmon egg rolls or the crowd-favorite crabby fries loaded with seasoned crab. Then head straight for the pastas: shrimp cognac scampi, lobster bisque pasta, lemon pepper chicken alfredo — or the vegan Bolognese, proof the kitchen takes plant-based cooking seriously. Finish with the butter cake, built on a recipe from Higgs’ mother, a pastry chef, with vanilla ice cream and strawberries.

The Space

The room reads like a swanky private club: dark walls, marble tables, a neon sign glowing “Be Ready to Try” — the English echo of the Italian word provare. An R&B-leaning playlist keeps the energy up, and downstairs hides Privé, a speakeasy-style lounge with DJs and cocktails named after Chicago streets.

Who It’s For

Date nights with something to prove, birthday tables, and eaters chasing flavors no other Chicago kitchen combines quite this way.

Good to Know

Do I need to book? Yes — the room is small and reservations are essentially required, especially on weekends.

Is there a time limit? Tables are typically kept to about seventy-five minutes, so arrive on time and order decisively.

What is Privé? The downstairs lounge, open later in the week through Sunday, with handcrafted cocktails and live DJ sets.

Vegan options? The vegan Bolognese is a genuine signature, not an afterthought; flag other needs when booking.

What should I wear? Dressed-up casual to full night-out attire — this is a room people dress for.
